Ingredients
- 1 ea Butternut Squash, Large (Peel and dice into 1” cubes)
- ¼ cup Oil, Canola/Olive Blend
- 8 Slices Bacon, Applewood, Thick cut (Rough Chopped)
- 1 ea Onion, Red, Fresh (Peel and dice into 1” cubes)
- Taste Rub-A-Dub Seasoning
- Taste Pepper, Black, Fresh Cracked
- Garnish Parsley, Italian Chopped
- 1 Cup Praline Pecans, rough chopped
Directions
Wash all tools prior to use
Clean and sanitize all cutting boards and prep surfaces prior to use
Read all manufacturer’s instructions before using ovens, grills, or any cooking tools
Heat your oven to 400˚ F
While oven is heating up –
Lightly Spray a 10” Cast Iron Skillet with cooking spray
Peel and dice the butternut squash into 1” cubes and hold
Peel and dice the bacon into 1” cubes and hold
Peel and dice the red onion into 1” cubes and hold
Add all the ingredients into a bowl
Mix well to combine
Add the oil and season to taste with Rub-A-Dub and Cracked Black Pepper
Pour the above into the cast iron skillet and level out if needed
Place into the oven at 400˚ F
Cook for 30-40 minutes or until desired doneness is reached, checking for doneness at the 15 minute mark and stirring the mixture using tongs
Continue to cook until desired doneness is achieved
Check for doneness by inserting a clean, dry, toothpick into the center and removing it clean
Using heat proof gloves, carefully remove the skillet and place on the stove top to cool/rest
Top with the rough chopped praline pecans and chopped parsely
Rest for 5 minutes
Devour !!!
Store any leftovers, cooled completely and covered
